Vegetable Manchurian with Vegetable Noodles

Veg Manchurian

Ingredients:
  • Cauliflower -1/4 cup (grated)
  • Cabbage- 1/4 cup (grated)
  • Carrot-1/4 cup (grated)
  • Capsicum- (yellow, red and green- half grated and remaining half finely sliced)
  • Spring Onions (finely sliced)
  • Ginger (finely sliced)
  • Garlic  (finely sliced)
  • Green Chillies (chopped)
  • Corn flour
  • Soy sauce
  • Chilly sauce
  • Salt as required
  • Cooking Oil for frying and sauteing




Method:

To prepare the Manchurian dumplings

  • Squeeze the grated vegetables to remove excess water from them.
  • Now add the green chilies, garlic, spring onion, corn flour and salt.
  • Knead them together, so that you can shape them as dumplings ball.
  • Heat oil in a pan on high flame, fry the dumplings till they turn light brown and remove them from oil.
  • Lower the flame, and again fry the dumplings until they turn golden brown.

For gravy:

  • Add 2 tsp oil in a pan and saute onions, capsicum, ginger and garlic.
  • Then add 1/4 cup water, 1Tbsp of soy sauce and green chilly sauce and let it boil well.
  • Mix a little maida in water and add this to the gravy mixture to thicken.
  • Just before serving add the dumplings into the gravy and serve.

Vegetable Noodles:

Ingredients:
  • Cabbage- 1/2 cup finely sliced
  • Capsicum -1/2 cup finely sliced
  • Ginger finely sliced
  • Garlic finely chopped
  • Spring onions finely chopped
  • Noodles- 1 packet
  • Salt as required
  • Oil- 1Tbsp
  • Soy sauce- 2 Tbsp
  • Chilly sauce- 1 Tbsp
Method:
  • Boil the noodles in water separately for 5 mins. Drain the noodles. Cool them with normal water so that they don't become sticky, drain the water from noodles and keep aside.
  • Add oil in a pan and saute the capsicum, cabbage, ginger, garlic and onions.
  • Add soy sauce and chilly sauce to the vegetables.
  • Now add the boiled noodles, mix well and turn off the heat. Serve hot with the Vegetable Manchurian.
